Vegan Lentil Usli | Hesru Kalu Usli | Vegan High Protein Lentil Curry



Total Cooking Time: 30 mins


Ingredients:

  • 2 cups Green Gram or Hesru Kalu
  • 3 Green chilies
  • 2 tsp Mustard Seeds
  • 1 cup finely chopped Onion
  • Pinch of Hing (Asafetida)
  • Salt to taste
  • 2 1/2 cups of Water
  • 1 tbsp Vegetable oil or vegan butter

Step by step photo recipe to make Vegan Lentil Usli:



  • Add 1 tbsp of vegetable oil or vegan butter in a pressure cooker. 
  • Once the oil has heated up, add Mustard seeds.

  • When the Mustard seeds crackle, add green chilies, Hing, and saute for 10 seconds.

  • Add chopped onion, salt, and saute till the onion has turned golden.



  • Next wash and add 2 cups green gram and 2 1/2 cups of water. Close the cooker lid and cook on high flame for 3 whistles.





  • When the green gram has cooked well it will look like the below picture. If it still looks uncooked or is hard and chewy, close the lid and cook for one more whistle.



  • I like the Usli a little soupy so I've added 1/2 cup of water to it. Chopped coriander leaves or fried green chilies can be added as garnish. Green Gram Usli can be had as it is or can be served with Rice or Roti.
