Vegan Malai Kofta Curry

Ingredients:

For Kofta balls:


  • 1 1/2 cup boiled Potatoes
  • 1/4 cup Gluten free flour / All purpose flour (Maida)
  • 1/2 inch Ginger finely chopped
  • 1/4 cup Cashew pieces
  • 2 tsp Garam Masala powder
  • 1/2 cup crumbled Extra Firm Tofu / Paneer (Cottage cheese)
  • 1/4 cup sweet Corn (Optional)
  • 1/2 tsp Turmeric powder
  • Salt as per taste

For Gravy:


  • 1 cup chopped Onion
  • 1 1/2 cup chopped Tomatoes
  • 1/2 cup Cashews (soaked in water)
  • 2 cloves of Garlic
  • 2 tsp Garam masala powder
  • 1 tsp Coriander powder (Optional)
  • 1 tsp Chaat Masala powder
  • 1 tsp Turmeric powder
  • 4 - 5 small pieces of dry red chili or 1 tsp red chili powder
  • 1 tsp dry kasoori methi leaves / dry fenugreek leaves (Optional)
  • Coriander leaves for garnish (Dhania leaves)
  • 1 tbsp Vegan butter 
  • 1 cup Almond milk / 1/2 cup fresh cream
  • Salt as per taste

Step by step photo recipe to make Vegan Malai Kofta Curry:




  • In a bowl combine all the ingredients for kofta balls except gluten free flour and mix well.

  • Next add 2 tbsp of flour and mix well. Make small balls out of the mixture and coat them with the remaining 2 tbsp of flour.



  • On medium to high flame heat oil for frying. Gently drop in all the kofta balls and fry till they turn golden brown.

  • Next heat 1 tbsp of oil in a pan and add onion, garlic, cumin seeds, and dry red chilies or red chili powder. Saute till onion turns golden brown and add chopped tomatoes.
  • Once the tomatoes are cooked blend all of it into a smooth paste.


  • On low flame heat 1 tbsp of butter and add cumin seeds to it. Saute it for 30 secs and add turmeric powder. 
  • Next add the ground paste and mix well.


  • Add 1/2 cup of water, garam masala powder, coriander powder, chaat masala powder, and salt. Mix well and let the gravy boil on low to medium flame for 3 to 4 minutes.

  • Next add 1 cup of almond milk and dry kasoori methi leaves. Let the gravy boil for another minute. Add salt if required.


  • Combine the kofta balls and gravy just before serving. As the kofta balls tend to get soggy in the gravy.
  • Serve Vegan Malai kofta curry with Rice or Roti.
