Vegan Veg Pulav | Vegan Spiced Vegetable Fried Rice

Ingredients:

  • 1/2 cup Basmati rice (Long grain rice)
  • 1 tsp Cumin seeds
  • 1 Bay leaf
  • 2 inch Cinnamon sticks
  • 1 Black Cardamom (Optional)
  • 3 Green Cardamom
  • 4 Cloves
  • 2 Star Anise (Phool) (Optional)
  • 1 cup of water
  • 1/4 cup of Almond milk / Coconut milk
  • 1/2 cup chopped Onion
  • 1 medium sized Potato chopped
  • 1/4 cup green Peas
  • 1/4 cup green Beans
  • 1/4 cup Carrots
  • 3 green Chilies finely chopped
  • 3 cloves of Garlic finely chopped
  • 1 inch Ginger finely chopped
  • 1 cup Mint leaves (Pudina leaves) finely chopped
  • Salt as per taste
  • 2 tbsp Vegan butter
  • 1 tbsp vegetable oil

Step by step photo recipe to make Vegan Veg Pulav:


  • Soak 1/2 cup of rice in a cup of water for 15 - 20 minutes.
  • Heat 2 tbsp of vegan butter and 1 tbsp of oil in a pan on medium flame. Add cumin seeds, bay leaf, cinnamon sticks, black cardamom, green cardamom, cloves, and star anise. Saute for a minute and add chopped onions.


  • Once the onions turn golden brown add finely chopped green chilies, garlic, ginger, and mint leaves. Saute for 1 - 2 minutes or till garlic turns golden brown.

  • Next add all the vegetables and saute for a minute. Cover and let the vegetables cook on low to medium flame for 2 - 3 minutes.

  • Add soaked rice to the vegetable mixture and saute for a minute on medium flame.

  • Next add salt, water, milk and mix well. On high flame let the mixture come to a boil. 
  • Once the water starts boiling turn the flame to medium and cover the pan with the lid as shown in the below picture. Cook the pulav with lid half covered for 5 - 6 minutes or till the water in it has evaporated. 
  • Once the water is evaporated, cover the lid and turn the flame to low. Cook for another 2 - 3 minutes.



  • Once the pulav is cooked, let it cool before mixing.

  • Vegan veg pulav can be had as it is or can be served with Kaju gravy.
