Vegan Bhindi Ka Salan | Vegan Okra Curry

Ingredients:

  • 2 cups of chopped Okra / Bhindi
  • 3 tbsp Peanuts
  • 2 tbsp Sesame seeds
  • 2 tbsp fresh/dry Coconut pieces
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • 1 cup chopped Onion
  • 1- 2 cloves of Garlic finely chopped
  • 1 inch Ginger finely chopped 
  • 1 green chili (Optional)
  • 1 tsp Red chili powder
  • 2 tsp Garam Masala powder
  • 1/2 tsp Turmeric powder
  • 5 - 6 Curry Leaves (Optional)
  • 1/2 cup Tamarind juice / 2 tbsp Tamarind paste
  • 1 tsp Jaggery / Coconut Sugar
  • 3 - 4 tbsp Vegetable / Coconut oil
  • Salt as per taste

Step by step photo recipe to make Vegan Bhindi Ka Salan:


  • Heat a pan on medium flame and add peanuts, sesame seeds, and coconut pieces. Roast for a minute and transfer it to a blending jar.



  • In the same pan add 1 tbsp of oil and onion. Saute till onion turns golden brown and add it to the blending jar as well. Blend peanuts, sesame, coconut, and onion into a smooth paste.



  • Next heat 2 tbsp of oil in a pan on medium flame. Add chopped okra to it and saute for 4 - 5 minutes. Once the okra is well roasted and has slightly turned golden brown transfer it to a bowl.



  • Next heat 1 tbsp of oil in a pan on medium flame and add mustard seeds to it. Once the mustard seeds crackle add cumin seeds, garlic, ginger, and curry leaves. Saute for a minute.


  • On low flame add red chili powder, turmeric powder, and saute for 10 seconds. Immediately add the prepared paste and mix well.  



  • Add 1 cup of water to it and let it boil on low to medium flame for a minute.



  • Add garam masala powder and tamarind juice. Stir the mixture well and add roasted okra.



  • Add salt and 1/2 cup of water if required. Let to mixture simmer on low flame for 3 to 4 minutes.

  • Bhindi ka salan can be served with Rice or Roti.
