Ingredients:
- 2 cups of chopped Okra / Bhindi
- 3 tbsp Peanuts
- 2 tbsp Sesame seeds
- 2 tbsp fresh/dry Coconut pieces
- 1/2 tsp Mustard seeds
- 1/2 tsp Cumin seeds
- 1 cup chopped Onion
- 1- 2 cloves of Garlic finely chopped
- 1 inch Ginger finely chopped
- 1 green chili (Optional)
- 1 tsp Red chili powder
- 2 tsp Garam Masala powder
- 1/2 tsp Turmeric powder
- 5 - 6 Curry Leaves (Optional)
- 1/2 cup Tamarind juice / 2 tbsp Tamarind paste
- 1 tsp Jaggery / Coconut Sugar
- 3 - 4 tbsp Vegetable / Coconut oil
- Salt as per taste
Step by step photo recipe to make Vegan Bhindi Ka Salan:
- Heat a pan on medium flame and add peanuts, sesame seeds, and coconut pieces. Roast for a minute and transfer it to a blending jar.
- In the same pan add 1 tbsp of oil and onion. Saute till onion turns golden brown and add it to the blending jar as well. Blend peanuts, sesame, coconut, and onion into a smooth paste.
- Next heat 2 tbsp of oil in a pan on medium flame. Add chopped okra to it and saute for 4 - 5 minutes. Once the okra is well roasted and has slightly turned golden brown transfer it to a bowl.
- Next heat 1 tbsp of oil in a pan on medium flame and add mustard seeds to it. Once the mustard seeds crackle add cumin seeds, garlic, ginger, and curry leaves. Saute for a minute.
- On low flame add red chili powder, turmeric powder, and saute for 10 seconds. Immediately add the prepared paste and mix well.
- Add 1 cup of water to it and let it boil on low to medium flame for a minute.
- Add garam masala powder and tamarind juice. Stir the mixture well and add roasted okra.
- Add salt and 1/2 cup of water if required. Let to mixture simmer on low flame for 3 to 4 minutes.
- Bhindi ka salan can be served with Rice or Roti.
