Ingredients:
For Red Tomato Chutney:
- 2 Red Tomatoes
- 2 Green chillies
- 1/2 tsp Mustard seeds
- 1/2 tsp Cumin seeds (Jeera)
- 2 tbsp Tamarind Juice
- 1 tbsp Coconut sugar or a small piece of Jaggery
- 1/4th cup roasted Peanuts
- 1 tbsp Urad dal (Black Gram)
- 1 1/2 tbsp roasted white sesame seeds (Till or Ellu)
- Salt to taste
- Water as required
For Tadka (topping):
- 1/2 tsp Mustard seeds
- 3 Dry Red chillies
- 1/2 tsp Cumin seeds (Jeera)
- 1 clove of Garlic finely chopped
- 6 to 7 Curry leaves
- 1 tsp Urad dal (Black gram)
- Pinch of Hing (Asafetida)
Step by step photo recipe to make Vegan Red Tomato Chutney:
- In a thick bottom pan, heat oil and add mustard seeds. Once the mustard seeds start to crackle, add cumin seeds, urad dal, green chillies, and saute. Once the urad dal turns golden, add tomato, peanuts, and saute till tomato softens.
- Transfer the tomato mixture into a blender. Add tamarind juice, salt, coconut sugar, sesame seeds, and grind it into a smooth paste.
- To make the tadka, heat 2 tbsp of oil in a small sauce pan and add mustard seeds. As soon as the mustard seeds crackle, add in cumin seeds, dry red chillies, minced garlic, urad dal, curry leaves, hing, and saute till the garlic turns golden brown.
- Top the chutney with the tadka and serve it with Rice, Roti or Paratha.
