Healthy Low Carb Salad | Healthy Post Workout Salad
Serves: 2
Ingredients:
- 2 cups Lettuce
- 1 cup Spinach (Palak)
- 1/2 carrot roughly chopped
- 2 tbsp Cranberry (or Raisins)
- 5 to 6 tbsp Dressing (Dressing used here is the Caesar Salad dressing)
- 1 cup croutons
- 1 Avocado sliced
- 1/2 cup cucumber pieces
- 2 cup Mixed greens
- 1 tsp Lemon Pepper (or Lemon juice)
- Salt to taste
Step by step photo recipe of the salad:
- Firstly, chop lettuce into bite size pieces or use the bag of chopped lettuce you get at the grocery store. Clean and prep. the store bought mixed greens as well.
- Roughly chop carrots and cucumber, and slice avocados vertically.
- Add lettuce, chopped carrots, cucumber, and cranberries in a mixing bowl. Add 5 to 6 tbsp of dressing, salt as per taste, lemon pepper, and mix it well.
- Now add in the spinach leaves and mixed greens. Gently fold it in without mushing it.
- Transfer the salad to a plate or a serving dish and add sliced avocados and croutons on top of the salad.
- Drizzle the dressing on top of the salad.
Note:
- Sunflower seeds or pumpkin seeds can also be added to the salad as they are rich in nutrients.
- Its best to have the salad when its fresh or else it may turn soggy.
