Vegan Chole Masala | Vegan Chickpea Curry

Ingredients:
  • 1 cup boiled potaoes
  • 1 1/2 - 2 cups cooked Chickpea
  • 1 1/2 cup chopped Onion
  • 1 - 2 cloves of Garlic
  • 1 inch Ginger
  • 1 cup Tomato puree
  • 3 tsp Garam Masala powder or Chole masala powder
  • 1 tsp Turmeric Powder
  • 1 1/2 tsp Red chili powder
  • 1/2 tsp Mustard seeds
  • 1 Bay leaf (Tej pata)
  • 2 one inch Cinnamon sticks
  • 3 Lavang (Clove)
  • 2 Star Anise (Phool)
  • 1 Black Cardamom pod
  • 3 green Cardamom pods
  • 3 tbsp Vegetable oil
  • Salt to taste

Step by step photo recipe to make Vegan Chole Masala:



  • Heat 2 tbsp of vegetable oil in a pan and add mustard seeds.

  • Once the mustard seeds crackle add cinnamon sticks, bay leaf, green cardamom pods, black cardamom pod, star anise, and clove. Saute for 30 seconds on medium flame.

  • On low flame add turmeric powder and red chili powder. Saute.



  • Make a paste of chopped onion, ginger, and garlic. Add the paste to the masala mixture. Saute on low to medium flame till onion paste turns golden brown.

  • Add tomato puree and cook on low flame for 2 minutes.

  • Add garam masala powder or chole masala powder and cook for another minute.

  • Next add cooked chickpea, potato, and mix well.

  • Add a 1/2 cup of water and let it boil on medium flame for 2 - 3 minute.

  • Check if salt needs to be added before serving. Serve with Puri, Rice, and Roti.
