Vegan Aloo Gobi Matar Sabzi | Vegan Potato, Cauliflower & Green Pea Stir Fry

Ingredients:

  • 1 large Potato chopped
  • 2 cup Cauliflower florets
  • 1/2 cup Green Peas
  • 1 cup chopped Onion
  • 1 - 2 cloves of Garlic
  • 1 inch Ginger
  • 1 tsp Turmeric Powder
  • 1 tsp Red chili powder
  • 1 tsp Coriander powder
  • 1 tsp Cumin powder
  • Chopped coriander leaves
  • 1 cup Tomato puree
  • 2 tsp  Garam Masala powder
  • 1 tsp Chaat Masala powder
  • 1 Bay leaf (Tej pata)
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Shahi jeera (Caram seeds) or Cumin seeds
  • 1/2 tsp Fennel seeds (Sonf seeds) (optional)
  • 1 tsp lemon juice
  • 3 tbsp Vegetable oil
  • Salt to taste

Step by step photo recipe to make Vegan Aloo Gobi Matar Sabzi:


  • Make a smooth paste of chopped onion, ginger, and garlic.

  • Heat 1 tbsp of oil in a pan. Add cauliflower, potato, and saute on low to medium flame for 1 minute. Cover and cook for 2 minutes on low flame.
  • Once the cauliflower and potato is half cooked transfer it into a bowl and set aside.



  • Next heat 2 tbsp of oil in a pan and add mustard seeds.  

  • When the mustard seeds crackle, add shahi jeera, fennel seeds, and bay leaf. Saute.

  • Next on low flame add the onion paste and saute for 2 minutes.

  • Once the raw smell of onion and garlic has reduced, add red chili powder, and turmeric powder. Saute and cook for another minute.

  • Add tomato puree and saute. Cover and cook on medium to low flame for 2 to 3 minute.

  • Next add all the spice powders and cook for another minute.

  • Add green peas, half cooked cauliflower and potato. Mix well and cook it on medium to low flame for 5 - 6 minute till the cauliflower is cooked well.


  • Add chopped coriander leaves, lemon juice, and mix well. Serve it with Rice or Roti.
