Ingredients:
- 1 large Potato chopped
- 2 cup Cauliflower florets
- 1/2 cup Green Peas
- 1 cup chopped Onion
- 1 - 2 cloves of Garlic
- 1 inch Ginger
- 1 tsp Turmeric Powder
- 1 tsp Red chili powder
- 1 tsp Coriander powder
- 1 tsp Cumin powder
- Chopped coriander leaves
- 1 cup Tomato puree
- 2 tsp Garam Masala powder
- 1 tsp Chaat Masala powder
- 1 Bay leaf (Tej pata)
- 1/2 tsp Mustard seeds
- 1/2 tsp Shahi jeera (Caram seeds) or Cumin seeds
- 1/2 tsp Fennel seeds (Sonf seeds) (optional)
- 1 tsp lemon juice
- 3 tbsp Vegetable oil
- Salt to taste
Step by step photo recipe to make Vegan Aloo Gobi Matar Sabzi:
- Make a smooth paste of chopped onion, ginger, and garlic.
- Heat 1 tbsp of oil in a pan. Add cauliflower, potato, and saute on low to medium flame for 1 minute. Cover and cook for 2 minutes on low flame.
- Once the cauliflower and potato is half cooked transfer it into a bowl and set aside.
- Next heat 2 tbsp of oil in a pan and add mustard seeds.
- When the mustard seeds crackle, add shahi jeera, fennel seeds, and bay leaf. Saute.
- Next on low flame add the onion paste and saute for 2 minutes.
- Once the raw smell of onion and garlic has reduced, add red chili powder, and turmeric powder. Saute and cook for another minute.
- Add tomato puree and saute. Cover and cook on medium to low flame for 2 to 3 minute.
- Next add all the spice powders and cook for another minute.
- Add green peas, half cooked cauliflower and potato. Mix well and cook it on medium to low flame for 5 - 6 minute till the cauliflower is cooked well.
- Add chopped coriander leaves, lemon juice, and mix well. Serve it with Rice or Roti.
