Vegan Schezwan Fried Rice

Ingredients:
- 1/2 cup Basmati Rice
- 1/4 cup thinly sliced onion
- 1/2 Jalapeno chopped (optional)
- 1/4 cup shredded cabbage
- 1/4 cup thinly sliced Carrot
- 1/4 cup chopped green Beans
- 1/4 cup green peas
- 1/4 cup sweet corn
- 1/4 cup chopped spring onions
- 1/4 cup chopped green bell pepper or green capsicum
- 1 to 2 cloves of Garlic finely chopped
- 1 inch Ginger finely chopped
- 1 tsp Turmeric powder
- 1 tsp Red chili powder
- 1 tsp black pepper powder
- 1/2 tsp Cane sugar
- 2 tbsp Lite soy sauce
- 1 tbsp rice vinegar or lemon juice
- 1/4 cup Schezwan sauce
- Salt to taste
Step by step photo recipe to make Vegan Schezwan Fried Rice:
- In a small pan, add 2 tsp vegetable oil, Basmati rice, 2 cups of water, and boil the rice for 6 to 7 mins till the rice has cooked. Strain the water out of the rice and set aside.
- Next in a separate pan, add 2 tbsp vegetable oil, finely chopped ginger and garlic, onion, and all the other vegetables. Cook till vegetables are medium cooked and onion has turned golden brown.
- Add turmeric powder, salt, red chili powder, pepper powder, sugar, and saute.
- Next add soy sauce, rice vinegar, and saute. Let it cook on medium flame for one minute.
- Add cooked rice to it and gently mix the rice without breaking the rice grains.
- On high flame saute the Schezwan fried rice for 30 seconds. Chopped coriander leaves can be added as garnish.
