Ingredients:
- 1/2 cup Cashews (Kaju)
- 1/2 cup roughly chopped onion
- 1/2 cup chopped tomato
- 1 tsp Red chili powder
- 1/2 tsp Turmeric powder
- 1 - 2 Garlic cloves
- 2 tsp Garam Masala
- 1 tsp Chaat Masala
- 1 tsp dry Kasuri Methi (Dry Fenugreek leaves)
- 1/4 cup Almond milk or Coconut milk
- 2 tbsp Vegetable oil or Coconut oil
- Salt as per taste
Step by step photo recipe to make Vegan Kaju Gravy:
- Heat 1 tbsp of oil in a sauce pan. Add chopped onion and garlic. Saute for a minute and add cashews (Set aside few cashew halves for garnish).
- Add chopped tomato, salt, and saute. Once the tomato is cooked, blend it into a smooth paste.
- In the same pan heat 1 tbsp of oil on low flame. Add turmeric powder and red chili powder and stir for 30 seconds.
- Add the tomato, onion, and cashew paste to the pan and stir well.
- Next add milk, garam masala, chaat masala, kasuri methi, 1/2 cup water, and salt if needed. Let the gravy boil on low to medium flame for 3 - 4 mins and transfer it into a serving dish.
- Heat 1/2 tsp of vegan butter in a sauce pan on low flame and add cashew halves. Saute till cashews turn golden and pour it on top of the gravy.
- Kaju Gravy can be served with Rice, Roti, Naan, and Biryani.
